Woolworths Ready Packs
- 1 × 1 kg Woolworths whole prawn pack
- 1 × 1 kg Woolworths mixed seafood pack
Base and Flavour:
- Olive oil – enough to gently fry the garlic
- Garlic – 1 teaspoon, finely minced
- Asian chilli salt, to taste
- Black pepper, to taste
- Roykers spice, to taste
- Hint of fresh lemon towards the end
Sauce:
- Salmon-flavoured cream cheese
- No cream added
- Milk only if the sauce is too thick or dry
Fresh Finish:
- Spinach
- Spring onion, sliced
- Chives, chopped
Method:
-
Bring a large pot of salted water to the boil and cook the linguine until al dente. Drain and set aside. Reserve some pasta water if needed.
-
Heat olive oil in a large pan over medium heat.
-
Add garlic and gently sauté until fragrant (do not brown).
-
Season with Asian chilli salt, black pepper, and Roykers spice.
-
Add seafood in stages:
-
Mixed seafood first
-
Whole prawns next
-
Mussels last
-
Cook gently until just cooked through. Avoid overcooking.
-
Lower the heat and stir in salmon-flavoured cream cheese until melted and creamy.
-
Only if needed, add a splash of milk or reserved pasta water to loosen the sauce.
-
Add spinach and allow it to wilt naturally.
-
Finish with a hint of fresh lemon to lift the dish.
-
Add the pasta, toss gently to coat, and finish with spring onion and chives.
Nicola’s Tip
A small squeeze of lemon right before serving lifts the whole dish and balances the richness of the sauce.
