Creamy Mince and Lentil

This is comfort food that still respects the body — nourishing, satisfying, and grounding.

Ingredients: (Serves 4)

Sauce and Pasta:

- 1 pack extra lean mince (±500g)

- ½ onion, finely chopped

- 1½ cups cooked lentils (green or brown)

- 1 chicken stock cube or 1 cup chicken broth

- 3 tbsp low-fat or reduced-fat cream cheese

- 1 tsp garlic powder

- ½ tsp white pepper

- Salt to taste

- 1 tsp Roykers spice (adds a warm, savory depth)

- A sprinkle of dried chives or finely chopped spring onion

- 1‒2 tbsp grated 6-month aged white cheddar (for garnish)

Method:

  • Braise the onions in a light drizzle of olive oil or cooking spray until soft and golden.

  • Add the lean mince and brown it well to seal in flavor.

  • Stir in the Roykers spice, garlic powder, white pepper, and salt.

  • Add the chicken broth, then mix in the lentils.

  • Let it cook on low heat ̶ slow simmer for about 20‒30 minutes for a rich, full flavor.

  • Add the chives or spring onion and stir through.

  • Mix in the cream cheese until creamy and smooth.

  • Serve hot, topped with a light sprinkle of white cheddar.​
